Ingredients
- 12 oz beef sirloin, cut into ½-inch thick strips
- 8 pieces wooden skewers, soaked in water for 30 minutes
- 3 stalks fresh lemongrass, white and pale green parts only, minced
- 4 cloves garlic, minced
- 1 medium shallot, minced
- 2 tbsp fish sauce, divided
- 2 tbsp lime juice, fresh squeezed
- 1 tbsp coconut sugar, or brown sugar
- 1.5 tbsp sesame oil, divided
- 1 cup jasmine rice, uncooked
- 1.5 cups water, for rice
- 4 stalks scallions, cut into 3-inch pieces
- 1 whole red chili, sliced thin, optional
- ¼ cup fresh mint leaves, for garnish
- ¼ cup fresh cilantro, for garnish
