Vietnamese Lemongrass Chicken Banh Mi Bowls

A flavorful twist on classic Vietnamese banh mi sandwiches, featuring lemongrass-marinated chicken, pickled veggies, and fresh herbs in a rice bowl.
Ingredients
- 1.5 lbs boneless, skinless chicken thighs
- 3 tbsp lemongrass, finely chopped
- 3 cloves garlic, minced
- 2 tbsp fish sauce
- 2 tsp brown sugar
- 2 tbsp lime juice
- 2 cups carrots, julienned
- 2 cups daikon radish, julienned
- 1/4 cup rice vinegar
- 2 cups jasmine rice
- 1/2 cup cilantro, chopped
- 1/4 cup mint leaves, chopped
- 1/4 cup roasted peanuts, chopped
- 2 tbsp sriracha or chili sauce, optional, for serving

In a large bowl, combine the chicken, lemongrass, garlic, fish sauce, brown sugar, and lime juice. Cover and marinate for 30 minutes to 1 hour.

While the chicken marinates, prepare the pickled vegetables. In a medium bowl, combine the julienned carrots, daikon, and rice vinegar. Set aside.
