Vietnamese Lemongrass Pork Stir-Fry

A vibrant and flavorful Vietnamese-inspired stir-fry featuring tender pork, fragrant lemongrass, and a medley of crisp vegetables.
Ingredients
- 1.5 lbs boneless pork loin, thinly sliced
- 3 tbsp lemongrass, finely chopped
- 4 cloves garlic, minced
- 2 tbsp ginger, grated
- 3 tbsp soy sauce
- 2 tbsp fish sauce
- 2 tsp brown sugar
- 2 tbsp lime juice
- 1 red bell pepper, sliced
- 2 cups carrots, julienned
- 1.5 cups snow peas, trimmed
- 4 green onions, sliced
- 1/4 cup fresh cilantro, chopped
- 3 cups jasmine rice

In a large bowl, combine the sliced pork, lemongrass, garlic, ginger, soy sauce, fish sauce, brown sugar, and lime juice. Toss to coat the pork and let marinate for 15-20 minutes.
