A delicious and healthy twist on the classic Vietnamese sandwich, with tender pork, pickled veggies, and aromatic herbs in a flavorful bowl.
Ingredients

- 2 cups carrot, julienned
- 2 cups daikon radish, julienned
- 1/4 cup rice vinegar
- 2 tbsp sugar
- 3 cloves garlic, minced
- 2 tbsp lemongrass, finely chopped
- 2 tbsp fish sauce
- 2 tbsp lime juice
- 1 tsp sriracha
- 2 cups brown rice, cooked
- 1 cup cucumber, sliced
- 1/4 cup cilantro, chopped
- 1/4 cup mint leaves, chopped

In a large bowl, combine the julienned carrot and daikon. Add the rice vinegar and sugar, tossing to coat. Let sit for 15 minutes to pickle.

In a skillet over medium-high heat, cook the ground pork, garlic, and lemongrass until the pork is browned and cooked through, about 8-10 minutes. Drain any excess fat.
