Zesty Brazilian Picanha Steak Skewers

Tender, marinated picanha steak skewers with a bright, zesty chimichurri sauce - a taste of Brazil perfect for the whole family!
Ingredients
- 2 lbs picanha steak, cut into 1-inch cubes
- 1/4 cup olive oil
- 2 tbsp lime juice
- 4 cloves garlic, minced
- 1 tsp oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup parsley, finely chopped
- 1/2 cup cilantro, finely chopped
- 2 tbsp red wine vinegar
- 1/4 tsp red pepper flakes
- 1 lb baby potatoes, halved
- 1 lb asparagus, trimmed and cut into 2-inch pieces

In a large bowl, combine the picanha steak cubes, olive oil, lime juice, garlic, oregano, salt, and black pepper. Toss to coat the steak. Cover and refrigerate for 30 minutes to 1 hour.

Meanwhile, in a small bowl, mix together the parsley, cilantro, red wine vinegar, and red pepper flakes to make the chimichurri sauce. Set aside.
