Zesty Moroccan Beef Tagine with Couscous

A fragrant and flavorful Moroccan-inspired beef stew, simmered with warm spices, dried fruit, and vegetables. Served over fluffy couscous for a comforting family meal.
Ingredients
- 1.5 lbs beef stew meat
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground cinnamon
- 1 tsp paprika
- 1 tsp turmeric
- 1 14oz can crushed tomatoes
- 2 cups chicken or vegetable broth
- 1 cup dried apricots, chopped
- 1 cup green beans, cut into 1-inch pieces
- 1 cup couscous
- 1 lemon, zested and juiced
- 1/4 cup fresh parsley, chopped
- 1 tsp salt
- 1/2 tsp black pepper

In a large pot or Dutch oven, heat 1 tbsp olive oil over medium-high heat. Add the beef and cook until browned on all sides, about 5 minutes. Transfer the beef to a plate.

Reduce the heat to medium, add the onion to the pot, and cook for 3-4 minutes until softened. Add the garlic and cook for 1 minute until fragrant.
