Zesty Moroccan Chicken Tagine with Apricot Couscous

Ingredients
- 1.5 lbs chicken thighs, boneless, skinless
- 2 tbsp olive oil
- 1 medium onion, diced
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp paprika
- 0.5 tsp ground cinnamon
- 1 14.5 oz can diced tomatoes
- 1 cup chicken broth
- 0.5 cup dried apricots, chopped
- 1 cup couscous
- 0.25 cup cilantro, chopped
- 4 lemon wedges, for serving

In a large skillet, heat the olive oil over medium-high heat. Add the chicken thighs and brown on both sides, about 3-4 minutes per side. Remove chicken and set aside.

Add the onion to the skillet and cook for 2-3 minutes until softened. Add the garlic, cumin, coriander, paprika, and cinnamon. Cook for 1 minute, stirring constantly, until fragrant.
