Moroccan Chicken Skewers with Quinoa Tabbouleh

Tender marinated chicken skewers with a vibrant Moroccan-spiced quinoa salad - a fun family-friendly meal with global flavors!
Ingredients
- 1.5 lbs boneless, skinless chicken thighs, cubed into 1-inch pieces
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 3 cloves garlic, minced
- 1 tsp paprika
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp cinnamon
- 1 cup quinoa
- 1 cucumber, diced
- 1 cup tomatoes, diced
- 1/4 cup parsley, chopped
- 2 tbsp mint, chopped
- 2 tbsp lemon juice
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper

In a large bowl, combine the cubed chicken, 3 tbsp olive oil, 2 tbsp lemon juice, garlic, paprika, cumin, coriander, and cinnamon. Toss to coat the chicken evenly. Cover and refrigerate for 30 minutes to 1 hour.

Meanwhile, prepare the quinoa tabbouleh. Bring 2 cups of water to a boil in a medium saucepan. Add the quinoa, cover, and reduce heat to low. Simmer for 15-20 minutes until quinoa is cooked through. Fluff with a fork and allow to cool slightly.
