- 3 cups butternut squash, cubed
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp ground ginger
- 1 tsp paprika
- 1/2 tsp cinnamon
- 1/4 tsp crushed red pepper
- 1 can diced tomatoes, 14.5 oz
- 1 cup low-sodium chicken broth
- 2 tbsp lemon juice
- 1/4 cup chopped cilantro

Preheat oven to 400°F. Toss the cubed butternut squash with 1 tsp olive oil, salt, and pepper on a baking sheet. Roast for 25-30 minutes, until tender.

In a large skillet or Dutch oven, heat 1 tsp olive oil over medium-high heat. Add the chicken and sear on both sides until golden brown, about 3-4 minutes per side. Remove chicken from the pan.
