Zesty Moroccan Chicken Tagine with Roasted Vegetable Couscous

Ingredients
- 1.5 lbs chicken thighs, boneless, skinless
- 1 medium onion, diced
- 3 large garlic cloves, minced
- 2 tbsp tomato paste
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp paprika
- 0.5 tsp cinnamon
- 1 14oz can crushed tomatoes
- 1 cup low-sodium chicken broth
- 1 15oz can chickpeas, drained and rinsed
- 1 cup couscous, whole wheat
- 2 medium zucchini, diced
- 1 medium bell pepper, diced
- 2 tbsp olive oil
- 1 lemon, juiced

In a large pot or Dutch oven, heat 1 tbsp of olive oil over medium-high heat.

Add the chicken thighs and brown on both sides, about 3-4 minutes per side. Remove the chicken from the pot and set aside.
