Authentic Japanese Yakisoba Chicken

Tender chicken and classic yakisoba noodles in a savory-sweet homemade sauce - a fun global family meal that kids love!
Ingredients
- 1.5 lbs boneless, skinless chicken thighs, diced into 1-inch pieces
- 8 oz yakisoba noodles, fresh or frozen
- 2 medium carrots, julienned
- 2 cups cabbage, shredded
- 4 whole scallions, chopped
- 1/4 cup soy sauce
- 2 tbsp rice vinegar
- 2 tbsp brown sugar
- 1 tbsp sesame oil
- 2 tsp ginger, grated
- 3 cloves garlic, minced
- 1/2 tsp crushed red pepper flakes, optional

Bring a large pot of water to a boil. Cook the yakisoba noodles according to package instructions, then drain and rinse with cold water.

In a large skillet or wok, heat 1 tbsp of sesame oil over medium-high heat. Add the diced chicken and cook, stirring occasionally, until browned and cooked through, about 6-8 minutes. Transfer the chicken to a plate.
