- 4 6-oz tilapia fillets, or other white fish like cod
- 3 medium zucchini, sliced into half-moons
- 1 cup quinoa, dry, rinsed
- 2 tbsp lemon juice
- 1 tsp black pepper
- 1 tsp garlic powder
- 2 tbsp olive oil
- 1/2 tsp salt
