Brazilian Picanha Steak Bowls

Juicy, flavor-packed picanha steak with black beans, roasted veggies, and zesty chimichurri sauce over quinoa. A fun family-friendly twist on classic Brazilian cuisine.
Ingredients
- 1.5 lbs picanha steak, or flank steak
- 1 cup quinoa, uncooked
- 1 15oz can black beans, drained and rinsed
- 2 bell peppers, sliced
- 1 small red onion, sliced
- 3 tbsp olive oil
- 3 cloves garlic, minced
- 1/4 cup parsley, chopped
- 1/4 cup cilantro, chopped
- 2 tbsp lime juice
- 1 tbsp red wine vinegar
- 1/4 tsp crushed red pepper
- salt and pepper, to taste

Preheat oven to 400°F. Toss bell peppers and onion with 1 tbsp olive oil, salt and pepper. Roast for 20 minutes, stirring halfway.

In a small bowl, combine parsley, cilantro, lime juice, vinegar, 2 tbsp olive oil, crushed red pepper, salt and pepper to make the chimichurri sauce.
