Brazilian Picanha Steak Skewers

Tender grilled picanha steak skewers with a zesty chimichurri sauce, served over a vibrant Brazilian black bean and rice bowl.
Ingredients
- 2 lbs picanha steak, cut into 1-inch cubes
- 3 tbsp olive oil
- 4 garlic cloves, minced
- 1 cup parsley, finely chopped
- 2 tsp oregano
- 3 tbsp red wine vinegar
- 2 tbsp lime juice
- 1/4 tsp crushed red pepper flakes
- 1 15oz can black beans, drained and rinsed
- 2 cups brown rice, cooked
- 1 bell pepper, diced
- 1 small onion, diced
- 4 lime wedges, for serving

In a bowl, combine the picanha cubes, 1 tbsp olive oil, and 2 minced garlic cloves. Thread the steak onto metal or soaked wooden skewers.

Make the chimichurri sauce by mixing the remaining 2 tbsp olive oil, 2 minced garlic cloves, parsley, oregano, red wine vinegar, lime juice, and crushed red pepper flakes. Season with salt and pepper to taste.
