Brazilian Picanha Steak with Chimichurri Sauce

Tender grilled picanha steak smothered in a vibrant, garlicky Brazilian chimichurri sauce, served with roasted sweet potato wedges and a crisp arugula salad.
Ingredients
- 2.5 lbs picanha steak, also known as top sirloin cap
- 1 cup fresh parsley, finely chopped
- 1/2 cup fresh cilantro, finely chopped
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 4 garlic cloves, minced
- 1/2 tsp crushed red pepper flakes
- 1 tsp salt
- 1/2 tsp black pepper
- 3 medium sweet potatoes, cut into wedges
- 5 oz arugula

1. Prepare the chimichurri sauce by combining the parsley, cilantro, olive oil, red wine vinegar, garlic, red pepper flakes, salt, and black pepper in a bowl. Stir to combine and set aside.
