Brazilian-Style Chicken Skewers with Chimichurri

Ingredients
- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch cubes
- 1/4 cup olive oil
- 2 tbsp lime juice
- 3 cloves garlic, minced
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup parsley, chopped
- 1/2 cup cilantro, chopped
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1/2 cup red onion, finely chopped
- 1 cup cucumber, diced
- 4 lime wedges

In a large bowl, combine the chicken, olive oil, lime juice, garlic, cumin, paprika, salt, and black pepper. Toss to coat the chicken. Cover and marinate in the refrigerator for at least 30 minutes, up to 24 hours.

In a food processor, combine the parsley, cilantro, olive oil, and red wine vinegar. Pulse until a coarse pesto-like sauce forms. Transfer to a bowl and stir in the red onion.
