Chinese Mapo Tofu with Sichuan Peppercorns

A Sichuan classic featuring cubes of silky tofu in a bold, spicy, and numbing sauce. Served over steamed jasmine rice.
Ingredients
- 1 block firm tofu, cut into 1-inch cubes
- 1/2 lb ground pork
- 1 tbsp Sichuan peppercorns, ground
- 2 tbsp chili bean sauce
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1/2 cup chicken broth
- 1 tbsp cornstarch, mixed with 2 tbsp water
- 3 scallions, sliced
- 1.5 cups jasmine rice, cooked

In a large skillet or wok, cook the ground pork over medium-high heat until browned and cooked through, 5-7 minutes, breaking it up as it cooks.

Add the ground Sichuan peppercorns, chili bean sauce, soy sauce, and rice vinegar. Stir to combine.
