Ethiopian Misir Wat with Injera & Gomen Sauté

A aromatic, deeply spiced red lentil stew infused with ginger, garlic, and berbere spices, served on spongy injera bread with sautéed collard greens. A warming, protein-rich dinner celebrating Ethiopian culinary traditions.
Ingredients
- 0.75 cup red lentils, dried, rinsed
- 2 cups collard greens, chopped
- 0.75 medium onion, finely diced, divided
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, minced
- 2.5 tsp berbere spice blend, Ethiopian spice mix
- 2 tbsp tomato paste
- 2 cups vegetable broth
- 1 tbsp coconut oil, for cooking
- 2 pieces injera bread, Ethiopian flatbread
- 0.25 tsp ground turmeric
- 0.5 tsp sea salt, to taste
- 0.25 tsp black pepper
Instructions

Heat 0.5 tbsp coconut oil in a pot over medium heat. Add half the diced onion and sauté for 4-5 minutes until golden.
