Ethiopian Misir Wat with Millet & Charred Broccolini

Aromatic red lentil stew infused with ginger, garlic, and warming spices, served over fluffy millet with crispy charred broccolini on the side. A deeply satisfying, globally-inspired dinner bursting with complex flavors.
Ingredients
- 0.75 cup red lentils, dried
- 0.5 medium onion, diced
- 1 tbsp fresh ginger, minced
- 3 cloves garlic, minced
- 2 tbsp tomato paste
- 1.5 cups vegetable broth
- 1 tbsp berbere spice blend
- 0.5 tsp paprika
- 0.5 tsp turmeric
- 0.5 tsp cumin
- 1 tbsp neutral oil
- 0.5 cup millet, dry
- 1 cup water, for millet
- 1.5 cups broccolini, fresh
- 1 tsp olive oil
- 1 pinch sea salt, to taste
- 1 pinch black pepper, to taste
- 0.5 tbsp lemon juice, fresh

Start cooking millet: Bring 1 cup water to boil, add millet, reduce to simmer, cover and cook 15-18 minutes until tender and fluffy.

While millet cooks, heat oil in a large pot over medium heat. Add diced onion and sauté 4-5 minutes until softened and lightly golden.
