Ethiopian Misir Wat with Injera & Sautéed Gomen

Aromatic red lentil stew infused with warm spices, served on spongy injera flatbread with garlicky collard greens. A deeply satisfying vegan dinner celebrating Ethiopian flavors.
Ingredients
- 0.75 cup red lentils, dried, rinsed
- 0.5 medium onion, finely diced
- 5 cloves garlic, minced
- 1 tbsp ginger, fresh, minced
- 2.5 tsp berbere spice blend, traditional Ethiopian spice mix
- 0.5 tsp turmeric
- 0.5 tsp cumin
- 2 cups vegetable broth
- 2 tbsp coconut oil, for cooking
- 1 tbsp tomato paste
- 1.5 cups collard greens, chopped
- 1 piece injera flatbread, store-bought or homemade
- 0.5 tsp sea salt, to taste
- 0.25 tsp black pepper, to taste
Instructions

Heat 1 tbsp coconut oil in a medium saucepan over medium heat. Add diced onion and sauté for 3-4 minutes until softened.
