- 1 15oz can black beans, drained and rinsed
- 1 14.5oz can diced tomatoes
- 4 cups cauliflower florets, riced
- 2 tbsp lime juice
- 1/4 cup cilantro, chopped
- 1 tbsp olive oil

In a large skillet over medium-high heat, cook the ground beef, onion, and bell pepper until the beef is browned and the vegetables are tender, 5-7 minutes, making sure to crumble the beef as it cooks.
