French Chicken Cordon Bleu Rolls

Ingredients

• 4 boneless, skinless chicken breasts, pounded thin
• 8 slices deli ham, thinly sliced
• 4 slices Swiss cheese, thinly sliced
• 1 cup breadcrumbs
• 2 tbsp Dijon mustard
• 2 eggs, beaten
• 2 tbsp butter, melted
• 1/2 tsp salt
• 1/4 tsp black pepper

Instructions

   Preheat oven to 400°F. Pound chicken breasts between two sheets of plastic wrap to 1/4-inch thickness.

   Place a slice of ham and a slice of Swiss cheese on each chicken breast. Roll up chicken and secure with toothpicks.
