Garlic Herb Pork Tenderloin with Roasted Broccoli and Quinoa

A delicious and easy-to-prepare Mediterranean-inspired pork tenderloin dish with a flavorful herb and garlic marinade, roasted broccoli, and fluffy quinoa.
Ingredients
- 1.5 lbs pork tenderloin
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 2 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- 1 tsp lemon zest
- 1 tsp salt
- 1/2 tsp black pepper
- 4 cups broccoli florets
- 1 cup quinoa, dry

In a large resealable bag, combine the olive oil, garlic, rosemary, thyme, lemon zest, salt, and pepper. Add the pork tenderloin and turn to coat. Refrigerate for at least 30 minutes, up to 24 hours.

Preheat oven to 400°F. Spread the broccoli florets on a baking sheet, drizzle with 1 tbsp olive oil, and season with salt and pepper. Roast for 15-20 minutes, until tender and lightly browned.
