Ingredients

- 3 tbsp olive oil
- 4 garlic cloves, minced
- 2 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- 1 tbsp lemon zest
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups broccoli florets
- 2 zucchini, sliced
- 1 red bell pepper, chopped
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper

In a large resealable bag, combine the pork tenderloin, 3 tbsp olive oil, garlic, rosemary, thyme, lemon zest, 1 tsp salt, and 1/2 tsp black pepper. Seal the bag and refrigerate for at least 4 hours or up to 24 hours.
