Greek Chicken Souvlaki with Tzatziki

Tender chicken skewers marinated in a flavorful Greek blend of lemon, garlic, and oregano, grilled to perfection and served with a cooling cucumber-yogurt tzatziki sauce. Accompanied by a fresh Greek salad and fluffy pita bread.
Ingredients
- 2 lbs boneless, skinless chicken thighs, cubed
- 1/4 cup lemon juice
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 tbsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup greek yogurt
- 1 cucumber, grated
- 1 tbsp lemon zest
- 2 tbsp dill, chopped
- 10 pita bread
- 1 head romaine lettuce, chopped
- 2 tomatoes, diced
- 1/2 red onion, thinly sliced
- 1/2 cup kalamata olives, pitted and halved
- 1/2 cup feta cheese, crumbled

In a large bowl, combine the cubed chicken, lemon juice, olive oil, garlic, oregano, salt, and pepper. Cover and marinate in the refrigerator for at least 30 minutes, up to 4 hours.

Make the tzatziki sauce by mixing the Greek yogurt, grated cucumber, lemon zest, and chopped dill in a bowl. Season with salt and pepper to taste. Refrigerate until ready to serve.
