Greek Honey Lavender Custard Tarts

Delicate and aromatic Greek-inspired custard tarts with a floral honey lavender filling in a buttery shortbread crust.
Ingredients
- 1.5 cups all-purpose flour
- 0.5 cup unsalted butter, cold, cubed
- 0.25 cup granulated sugar
- 3 egg yolks
- 1.5 cups whole milk
- 0.25 cup honey, plus more for drizzling
- 1 teaspoon dried lavender, plus more for garnish
- 1 teaspoon vanilla extract
- 1 teaspoon lemon zest

Make the tart crust: In a food processor, pulse the flour, butter, and sugar until mixture resembles coarse crumbs. Add 1 egg yolk and pulse until dough begins to come together. Form dough into a disk, wrap in plastic, and chill for 30 minutes.

Preheat oven to 375°F. Grease a 12-cup muffin tin. On a lightly floured surface, roll the dough to 1/8-inch thickness. Cut into 3-inch rounds and press into the prepared muffin cups.
