Greek Honey-Roasted Figs with Whipped Mascarpone & Crushed Pistachios

Warm roasted figs drizzled with thyme-infused honey, topped with creamy whipped mascarpone sweetened with maple syrup, finished with toasted pistachios and a sprinkle of sea salt. An elegant, naturally-sweetened dessert celebrating Mediterranean simplicity.
Ingredients
- 12 whole fresh figs, halved lengthwise
- 3 tablespoons extra virgin olive oil, Greek or Italian
- 4 tablespoons raw honey, unfiltered, local if possible
- 4 sprigs fresh thyme sprigs, or 1 tsp dried
- 200 grams mascarpone cheese, room temperature
- 2 tablespoons pure maple syrup, grade A or B
- 80 grams shelled pistachios, unsalted, roughly chopped
- 1 pinch sea salt, Maldon or fleur de sel
- 1 teaspoon lemon zest, fresh

Preheat oven to 400°F (200°C). Place halved figs cut-side up on a parchment-lined baking sheet.

Drizzle figs with 2 tablespoons olive oil, then drizzle 3 tablespoons honey between the fig halves. Scatter thyme sprigs over the figs.
