A Mediterranean twist on the classic Middle Eastern egg dish, featuring poached eggs nestled in a vibrant tomato-spinach sauce enriched with feta cheese, topped with pan-fried halloumi for a salty, squeaky texture contrast. Served with seeded whole grain toast for dipping.
Ingredients
- 3 tbsp extra virgin olive oil, divided
- 1 medium yellow onion, thinly sliced
- 4 cloves garlic cloves, minced
- 6 cups fresh spinach, loosely packed
- 1 can (28 oz) crushed tomatoes, San Marzano preferred
- 1.5 tsp dried oregano
- 0.5 tsp red pepper flakes, adjust to taste
- 0.75 tsp sea salt
- 0.5 tsp black pepper
- 8 eggs large eggs, room temperature
- 0.75 cup crumbled feta cheese
- 8 oz halloumi cheese, sliced into 8 pieces, 0.25-inch thick
- 2 tbsp fresh dill, chopped
- 8 slices whole grain seeded bread, for toasting
