Ingredients
- 10 whole large eggs, room temperature
- 10 oz halloumi cheese, sliced into 1/2-inch planks
- 2 medium zucchini, sliced lengthwise into thin strips
- 1 large red bell pepper, chopped into 1-inch pieces
- 1/2 medium red onion, thinly sliced
- 3 tbsp fresh dill, chopped
- 2 tbsp fresh mint, chopped
- 1/3 cup Kalamata olives, pitted and halved
- 5 tbsp extra-virgin olive oil, divided
- 3 cloves garlic, minced
- 1 tbsp lemon zest
- 1 tsp sea salt
- 1/2 tsp black pepper
- 1 tbsp whole grain mustard
