Grilled Honey-Garlic Pork Tenderloin with Roasted Sweet Potato Salad

Tender pork tenderloin marinated in a savory-sweet honey-garlic sauce, grilled to perfection and served alongside a vibrant roasted sweet potato and arugula salad for a nourishing GLP-1 friendly dinner.
Ingredients
- 1.25 lbs pork tenderloin, trimmed of excess fat
- 2 tbsp honey
- 3 cloves garlic, minced
- 2 tbsp low-sodium soy sauce
- 1 tbsp lime juice
- 2 medium sweet potatoes, peeled and cubed
- 2 tbsp olive oil
- 4 cups arugula
- 1/2 medium red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 2 tbsp balsamic vinegar
- 1 tsp Dijon mustard
- salt and pepper, to taste

In a shallow baking dish, combine the honey, garlic, soy sauce, and lime juice. Add the pork tenderloin and turn to coat evenly. Cover and marinate for 30 minutes.

Preheat the oven to 400°F. Toss the cubed sweet potatoes with 1 tbsp of olive oil and season with salt and pepper. Spread on a baking sheet and roast for 20-25 minutes, until tender and lightly browned.
