Seared Ginger-Garlic Pork Tenderloin with Roasted Butternut Squash and Broccoli

Ingredients
- 1 lb pork tenderloin, trimmed of excess fat
- 3 cloves garlic, minced
- 2 tbsp fresh ginger, grated
- 2 tbsp low-sodium soy sauce
- 1 tbsp rice vinegar
- 4 cups butternut squash, peeled, seeded and cubed
- 4 cups broccoli florets
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper

1. In a shallow baking dish, combine the pork tenderloin, garlic, grated ginger, soy sauce, and rice vinegar. Cover and marinate in the refrigerator for at least 30 minutes, up to 4 hours.

2. Preheat the oven to 400°F. Spread the cubed butternut squash and broccoli florets on a large baking sheet. Drizzle with 1 tbsp of olive oil and season with salt and pepper. Toss to coat.
