Ingredients

- 3 medium sweet potatoes, cut into wedges
- 2 tbsp olive oil, divided
- 2 tbsp lemon juice
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp salt
- 0.5 tsp black pepper

Preheat oven to 400°F. Cut the sweet potatoes into 1/2-inch thick wedges and place on a baking sheet. Drizzle with 1 tbsp of olive oil, season with salt and pepper, and toss to coat. Roast for 25-30 minutes, flipping halfway, until tender and lightly browned.
