Grilled Lemon-Herb Halibut with Roasted Garlic Quinoa and Sautéed Spinach

Tender halibut fillets marinated in a zesty lemon-herb blend, served over a bed of fluffy quinoa infused with roasted garlic, and accompanied by a side of sautéed spinach. A perfectly balanced GLP-1 friendly dinner that's easy to prepare.
Ingredients
- 1.5 pounds halibut fillets, about 4 fillets
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup quinoa
- 2 cups chicken broth
- 4 cloves garlic, roasted
- 5 cups spinach

Preheat the oven to 400°F. Spread the garlic cloves on a small baking sheet and roast for 15-20 minutes, until softened and fragrant. Set aside.

In a shallow dish, combine the olive oil, lemon juice, minced garlic, oregano, basil, salt, and pepper. Add the halibut fillets and turn to coat both sides. Cover and refrigerate for 30 minutes to marinate.
