Ingredients
- 1.25 lbs pork tenderloin, trimmed of excess fat
- 1/2 cup low-sodium teriyaki sauce
- 2 tbsp fresh ginger, grated
- 3 cloves garlic, minced
- 2 medium sweet potatoes, peeled and cubed
- 2 cups broccoli florets
- 1.5 cups Brussels sprouts, halved
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper

In a shallow baking dish or resealable bag, combine the teriyaki sauce, grated ginger, and minced garlic. Add the pork tenderloin and turn to coat evenly. Cover or seal and marinate in the refrigerator for 30 minutes to 1 hour.

Preheat the grill or grill pan to medium-high heat. Remove the pork tenderloin from the marinade and discard any remaining marinade. Grill the pork for 12-15 minutes, turning occasionally, until it reaches an internal temperature of 145°F. Transfer the pork to a cutting board and let rest for 5 minutes before slicing.
