Teriyaki Pork Rice Bowls with Edamame and Pickled Cucumbers

Ingredients
- 1.5 lbs boneless pork chops, cut into 1-inch cubes
- 1/2 cup teriyaki sauce
- 2 cups brown rice, cooked according to package
- 2 cups edamame, shelled
- 1 large cucumber, thinly sliced
- 1/4 cup rice vinegar
- 1 tbsp sesame oil
- 2 tbsp soy sauce
- 1 tbsp honey
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 2 green onions, sliced
- 2 tbsp sesame seeds

In a large skillet, cook the pork in 1 tbsp sesame oil over medium-high heat until browned on all sides, about 5-7 minutes.
