Indian Masala Dosa with Coconut Chutney

A savory South Indian breakfast crepe filled with spiced tempeh, potatoes, and onions, served with tangy coconut-cilantro chutney and sambar. Crispy on the edges with a soft, fermented rice and lentil batter center.
Ingredients
- 1/2 cup dosa batter, store-bought or pre-fermented
- 1 medium potato, cubed
- 1/4 medium yellow onion, thinly sliced
- 2 tbsp coconut oil, divided
- 1/2 tsp mustard seeds, whole
- 8 leaves curry leaves, fresh
- 1/4 tsp turmeric powder
- 1/2 tsp red chili powder
- 3/4 tsp salt, divided
- 1/2 cup fresh coconut, grated
- 1/4 cup cilantro, fresh
- 1 whole green chili
- 1 tbsp lime juice, fresh
- 3 tbsp water, for chutney
- 1 tsp sambar powder
- 1 cup vegetable broth
- 1 small tomato, chopped
- 1/4 tsp hing, asafoetida

Make coconut chutney: Blend coconut, cilantro, green chili, lime juice, 1/4 tsp salt, and water until smooth. Set aside.

Heat 1 tbsp coconut oil in a pan. Add mustard seeds and half the curry leaves until seeds pop.
