Korean Beef Bulgogi Bowl with Crispy Rice & Sesame Vegetables

Tender marinated beef with sweet-savory Korean flavors served over crispy rice with quick-pickled cucumbers and sesame-roasted carrots. A fun build-your-own bowl where everyone customizes their toppings!
Ingredients
- 1.25 lbs beef sirloin or ribeye, thinly sliced against the grain
- 4 tbsp soy sauce
- 3 tbsp honey
- 3 tbsp sesame oil, divided
- 3 tbsp rice vinegar, divided
- 4 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 3 stalks green onions, sliced, divided
- 2 cups short-grain white rice, uncooked
- 3 medium carrots, cut into thin sticks
- 1 whole English cucumber, thinly sliced
- 3 tbsp sesame seeds, white or black
- 3 tbsp vegetable oil, for cooking
- 1 tsp salt
- 1/2 tsp black pepper

Cook rice according to package directions and let cool slightly.

Combine soy sauce, honey, 2 tbsp sesame oil, 2 tbsp rice vinegar, garlic, ginger, and half the green onions in a bowl. Add beef slices and toss to coat evenly. Marinate for 10 minutes.
