Korean Bulgogi Beef Bowl with Garlicky Spinach

Tender, marinated bulgogi beef served over rice with a side of garlicky sautéed spinach for a balanced family-friendly Korean-inspired dinner.
Ingredients
- 1.5 lbs flank steak, thinly sliced
- 1/4 cup soy sauce
- 2 tbsp brown sugar
- 4 cloves garlic, minced
- 1 tbsp ginger, grated
- 2 tsp sesame oil
- 1/2 tsp red pepper flakes
- 5 cups baby spinach
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 2 cups cooked brown rice
- 2 tbsp sesame seeds
- 3 whole green onions, sliced

In a large bowl, combine the sliced flank steak, soy sauce, brown sugar, 4 cloves minced garlic, grated ginger, sesame oil, and red pepper flakes. Toss to coat the beef and let marinate for 30 minutes.

In a large skillet, heat 1 tbsp olive oil over medium heat. Add the 3 cloves minced garlic and cook for 1 minute until fragrant. Add the spinach and sauté until just wilted, about 2-3 minutes. Season with salt and pepper.
