Korean Bulgogi Beef with Kimchi Fried Rice

Tender marinated bulgogi beef stir-fried with fragrant kimchi and vegetables, served over a bed of savory fried rice.
Ingredients
- 1.5 lbs beef sirloin, thinly sliced
- 1/2 cup soy sauce
- 3 tbsp brown sugar
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 2 tbsp sesame oil
- 2 tbsp rice vinegar
- 1 cup kimchi, chopped
- 1 medium onion, diced
- 1 medium carrot, julienned
- 8 oz mushrooms, sliced
- 4 cups cooked brown rice
- 1/2 cup green onions, sliced
- 2 tbsp toasted sesame seeds

In a large bowl, combine the sliced beef, soy sauce, brown sugar, garlic, ginger, sesame oil, and rice vinegar. Toss to coat the beef and marinate for at least 15 minutes.

Heat a large wok or skillet over high heat. Add the marinated beef and stir-fry until browned and cooked through, about 5-7 minutes. Remove the beef from the wok and set aside.
