Ingredients
- 10 oz boneless chicken thighs, cut into 1.5-inch pieces
- 3 tbsp extra virgin olive oil, divided
- 2 tbsp pomegranate molasses
- 4 cloves garlic, minced
- 1.5 tsp ground cumin
- 1 tsp ground coriander
- 0.75 tsp smoked paprika
- 0.5 tsp ground allspice
- 2 tbsp fresh lemon juice
- 0.5 tsp sea salt
- 0.25 tsp black pepper
- 3 cups cauliflower florets, bite-sized
- 0.75 cup farro, uncooked
- 2.25 cups vegetable broth, low-sodium
- 0.33 cup fresh parsley, chopped
- 2 tbsp fresh mint, chopped
- 3 tbsp pine nuts, toasted
- 0.25 medium red onion, thinly sliced
