Moroccan-Spiced Chicken Skewers with Quinoa Tabbouleh

Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cubed
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 3 cloves garlic, minced
- 1 tsp paprika
- 1 tsp cumin
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup quinoa
- 1 medium cucumber, diced
- 1 pint cherry tomatoes, halved
- 1/2 cup red onion, thinly sliced
- 1/2 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 3 tbsp lemon juice
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper

In a large bowl, combine the cubed chicken, 2 tbsp olive oil, 2 tbsp lemon juice, garlic, paprika, cumin, cinnamon, salt, and pepper. Toss to coat the chicken. Thread the marinated chicken onto metal or wooden skewers.

Preheat grill or grill pan to medium-high heat. Cook the chicken skewers for 6-8 minutes per side, or until cooked through.
