Lemon Garlic Chicken Bulgogi Bowls

Tender chicken thighs in a sweet and savory Korean-inspired bulgogi sauce, served over fluffy bulgur wheat with roasted broccoli and carrots.
Ingredients
- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 cup bulgur wheat
- 3 cups broccoli florets
- 2 medium carrots, peeled and cut into 1/2-inch pieces
- 1/4 cup soy sauce
- 2 tbsp brown sugar
- 2 tbsp rice vinegar
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 tbsp sesame oil
- 2 tbsp olive oil
- salt and pepper, to taste

1. Preheat oven to 400°F. Toss the broccoli and carrots with 1 tbsp olive oil, salt, and pepper on a baking sheet. Roast for 18-20 minutes, until tender and lightly browned.

2. In a medium saucepan, bring 2 cups of water to a boil. Add the bulgur, cover, and reduce heat to low. Simmer for 12-15 minutes, until bulgur is tender. Fluff with a fork.
