Lemon Herb Baked Salmon with Mediterranean Quinoa Salad

Ingredients
- 4 salmon fillets
- 1/4 cup lemon juice
- 2 tbsp olive oil
- 3 garlic cloves, minced
- 1/4 cup fresh parsley, chopped
- 2 tbsp fresh dill, chopped
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup quinoa
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup kalamata olives, pitted and chopped
- 1/4 cup feta cheese, crumbled
- 2 tbsp lemon juice
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1/4 tsp salt
- 1/4 tsp black pepper

In a shallow baking dish, combine the lemon juice, olive oil, garlic, parsley, dill, salt, and pepper. Add the salmon fillets and turn to coat evenly. Cover and refrigerate for 30 minutes to 1 hour.

Preheat the oven to 400°F. Arrange the marinated salmon fillets on a parchment-lined baking sheet. Bake for 18-22 minutes, or until the salmon flakes easily with a fork.
