Mediterranean Braised Lamb Shanks with Herb Couscous

Tender, fall-off-the-bone lamb shanks braised in a rich tomato-herb sauce, served over a fluffy couscous pilaf with roasted Mediterranean vegetables.
Ingredients
- 4 lamb shanks
- 2 tbsp olive oil
- 1 onion, diced
- 4 garlic cloves, minced
- 1 28 oz can canned diced tomatoes
- 2 tbsp tomato paste
- 1/2 cup red wine
- 2 cups chicken broth
- 1 tsp dried oregano
- 1 tsp dried thyme
- 2 bay leaves
- 1 tsp salt
- 1/2 tsp black pepper
- 1 1/2 cups couscous
- 2 cups vegetable broth
- 2 zucchini, diced
- 1 bell pepper, diced
- 1 pint cherry tomatoes, halved
- 1/4 cup fresh parsley, chopped

Preheat oven to 325°F.

Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Season the lamb shanks with salt and pepper, then brown them on all sides, about 3-4 minutes per side. Remove shanks from the pot and set aside.
