- 1/4 cup fresh parsley, finely chopped
- 2 tbsp fresh dill, finely chopped
- 1 tbsp lemon zest, from 1 lemon
- 1 clove garlic, minced very fine
- 3 tbsp whole wheat panko, crushed
- 3 tsp olive oil, divided
- 1/2 tsp sea salt, divided
- 1/4 tsp black pepper, divided
- 3/4 cup farro, uncooked
- 1.5 cups low-sodium vegetable broth
- 1/2 medium cucumber, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 medium red bell pepper
