Miso-Glazed Salmon Bowls with Edamame Fried Rice

Tender miso-marinated salmon fillets paired with a vibrant fried rice made with edamame, carrots, and scallions for a fast and flavorful family-friendly dinner.
Ingredients
- 4 salmon fillets
- 2 tbsp miso paste
- 1 tbsp rice vinegar
- 1 tbsp brown sugar
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1 cup edamame, shelled
- 1 cup carrots, diced
- 4 scallions, sliced, plus more for serving
- 3 cups cooked brown rice
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 2 eggs, beaten

In a shallow dish, combine the miso paste, rice vinegar, brown sugar, garlic, and ginger. Add the salmon fillets and turn to coat. Cover and marinate for 30 minutes to 1 hour.

In a large skillet or wok, heat 1 tbsp sesame oil over medium-high heat. Add the edamame, carrots, and scallions and stir-fry for 2-3 minutes until tender-crisp.
