Moroccan Beef Tagine

Ingredients
- 1.5 lbs beef chuck, cubed
- 1 onion, diced
- 4 garlic cloves, minced
- 2 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp ground cinnamon
- 1 tsp paprika
- 1/4 tsp saffron threads
- 1 14oz can diced tomatoes
- 2 cups beef broth
- 2 cups butternut squash, peeled and cubed
- 1 cup green beans, trimmed and cut into 1-inch pieces
- 2 tbsp preserved lemon, rind only, minced
- 1/4 cup fresh parsley, chopped

In a large pot or Dutch oven, brown the beef over medium-high heat until lightly seared on all sides, about 5 minutes. Remove the beef from the pot and set aside.
