Moroccan Spiced Beef and Sweet Potato Stew

- 1.5 lbs beef stew meat
- 3 cups sweet potatoes, peeled and cubed
- 1 medium onion, diced
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 0.5 tsp ground cinnamon
- 0.5 tsp paprika
- 1 14.5 oz can crushed tomatoes
- 2 cups beef broth
- 1.5 cups couscous
- 0.25 cup fresh parsley, chopped
- 4 lemon wedges

Preheat oven to 400°F. Toss the cubed sweet potatoes with 1 tbsp olive oil and spread on a baking sheet. Roast for 20-25 minutes, until tender and lightly browned.

In a large pot or Dutch oven, heat 1 tbsp olive oil over medium-high heat. Add the beef and cook until browned on all sides, about 5 minutes. Remove beef to a plate.
