Moroccan Spiced Beef Tagine with Bulgur Pilaf

A family-friendly Moroccan-inspired beef tagine with warm spices, tender vegetables, and fluffy bulgur pilaf for a wholesome, globally-inspired dinner.
Ingredients
- 1.5 lbs beef stew meat
- 1 large onion, diced
- 4 cloves garlic, minced
- 1 can diced tomatoes, 14.5 oz
- 2 cups beef broth
- 3 medium carrots, peeled and sliced
- 1 medium zucchini, diced
- 1 cup bulgur wheat
- 2 cups chicken or vegetable broth
- 1 tsp cinnamon
- 1 tsp cumin
- 1 tsp paprika
- 1/2 cup dried apricots, chopped
- 1/4 cup chopped cilantro, for garnish

In a large pot or Dutch oven, brown the beef stew meat over medium-high heat until seared on all sides, about 5 minutes. Remove beef and set aside.

Add the onion to the pot and sauté for 2-3 minutes until translucent. Add the garlic and sauté for 1 minute until fragrant.
