Moroccan-Spiced Beef Tagine with Couscous

A flavorful one-pot Moroccan-inspired beef tagine with warm spices, tender vegetables, and fluffy couscous.
Ingredients
- 1.5 lbs beef stew meat, cut into 1-inch cubes
- 1 large onion, diced
- 3 medium carrots, peeled and sliced
- 4 cloves garlic, minced
- 2 tbsp tomato paste
- 1 tsp ground cinnamon
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp turmeric
- 1/4 tsp cayenne pepper, or to taste
- 1 15 oz can diced tomatoes
- 1 cup low-sodium beef broth
- 1/2 cup dried apricots, chopped
- 1 cup couscous

In a large pot or Dutch oven, heat 1 tbsp olive oil over medium-high heat. Add the beef and brown on all sides, about 5 minutes total. Remove beef to a plate.

Reduce heat to medium, add another 1 tbsp olive oil to the pot. Add the onion and carrots and cook for 5-7 minutes until softened.
